I'd like to replace the stock steering wheel with another that's more "eye catching" and hopefully away from a "grandfatherly-look".
What later year of Subaru can I mount without having to buy an adapter.

I'm pretty sure you can use any Legacy/Impreza/Outback/Baja/Forester steering wheel. Your car's a '91, right? If so, you may have a nonfunctional air bag in the new wheel. Just make sure that you consult someone who knows about airbags so you properly disarm it (on many cars I think this just means shorting both pins going to the airbag actuator, so that no voltage can develop across them).
It's kind of funny... Subaru only really sells one car in North America today, pretty much. The BC/BF Legacy was in large part a new design. The GC/GF Impreza was essentially a shortened BC/BF. The BD/BG is very similar to the BC/BF in its underpinnings, although most cosmetic things changed. The Outbacks are of course pretty much Legacies and Imprezas. The "new age" Imprezas and Legacies are still very much the same underneath as our cars.
