Whats the difference between the grey and white style? Especially if they are both in "perfect" condition?

Grey is prone to cracking
He doesnt want to have to replace it twice

There is a difference, because the grey one will crack in the future, and the white one wont

I have 2-3 grey ones, all non-cracked, and one white one. Greay one installed. Other than the fact it may "crack", any reason I should replace it?

Right. The gray-connector one is the original design which is prone to early failure. If you still have a working gray-connector knock sensor, you're lucky. Subaru redesigned the sensor in 1995 to address the problem, and put white connectors on the redesigned sensors to make it easy to know which type a sensor was.
God only knows why they chose white (which looks gray when dirty) as the new color instead of, say, blue or red or something.
If they're both still working, a gray-connector sensor is functionally identical to a white-connector sensor.

The fact that it may fail unexpectedly is reason enough to replace it with the redesigned sensor you already have, no?
