Yes, the ideal size for a 17x8 is 225/45. However you can put those tires on a 7 or 7.5" tire without any problems especially if they run a little narrow. For example I have Hankook v12s in that size on 17x7 LGT wheels but would want a 17x8 if I was going to use a hankook RS3 which is wider for the same size.
205s on an 8 or 225s on an 8.5 is a bit too much stretch, however you do want the rim to be at least as wide as the tread because it supports the tire better.
