can anyone tell me how much trans oil in a 91gt turbo auto

8.8 US quarts total. Changing it will not require that much. Look at how much comes out and estimate. Will probably be about 3.2 US quarts (3 liters, 2.6 imp quarts).
So add about 2 US quarts, then check level with car on flat ground and add as needed.

This info is in the owner's manual.

IIRC you have to check it while running.

Yes, move gear selector through all postitions then check while keeping it running.
