My cars are acting like women!!!!!

ok so heres the deal i have 2 1990 legacy L 2.2L wagons
I just bought one of them a few days ago for 200 bucks really good deal... 202,000mi new clutch, tires, struts... now for the problems! before i bought it the crankshaft pulley keyway had broke and the pulley pratically fell off. that was fixed along with the timing belt being replaced however when the timing belt was replaced they got one of the cams a tooth off ie didnt run worth a darn. so that is why i got it so cheap was cause the guy thought the motor was bad or somthing. i fixed that problem but now after the car warms up you rev it up and when the rpm drops back down the car will almost die a couple of times because the rpm drops then catches and drops a couple of times to like 100-200 rpm. i am wondering if that is somthing that will go away with time or could it be some sort of bad sensor. also i dropped the catylitic converter and it was clogged so i just left it off for now and it does have like 2 month old gas in it and it does have a K&N cone style filter on it deleting the original air box but those are just kinda food for thought
My other car that ive had for like 2 years which has 246,000 miles on it just last night started to do almost the same thing with the the idle problem only it does it when it is cold and it started then died and i had to floor it to start it again and then i had to let it sit for a min before i could go anywhere cause the idle would do its flux thing.... also it didnt do it after sitting all night but it did it after i drove to school(20 mi) after sitting for like 4 hours. i am in wyoming and it has been really cold for the last couple of days but it has never done anything like that before so im thinkin my cars are just havin thier "period" lol
