I've noticed some other wagons with extra seats

They usually face the rear and are located in the trunk. From what I have seen, they are fold away seats. How easy would it be to fabricate something like that?

Find the folding chairs from an old Land Rover or American station wagon, drill and tap.

the ford taurus from the late 80's / early 90's were probably the ones you saw the most of... they're everywhere in the junkyards...
with kooshy seats!
