It's not really a burst of pressure so much as it's a vacuum. When you release the cap, air is rushing into the tank to replace the gas that was removed when you were driving.

Isnt that what the tank vent is for that goes to the canister?

My car does it, I was under the impression a bad purge control solenoid had something to do with it. Or gas cap. I don't remember.
But yah, my subaru is the only car I've had that acts like it's been starved every time I open the gas cap.

I would assume that would be for the gas fumes themselves, not the air that flows into the tank when one opens the gas cap.
