random temp gauge

So I just noticed today that my temperature gauge is bouncing around a lot. This must have just started. Basically as it warms up, instead of steadily increasing, it will bounce around to the different levels. It will drop suddenly to a cooler temperature then work it's way back up again. When the car is warmed up it will sit just under half way, it never gets any hotter, but it will drop below the halfway to the quarter mark and just fluctuate around all in between there.

This obviously isn't normal, but what should I be worried about most? Is this indicative of a bad coolant temp sensor, or could it be a head gasket going bad?

It looks like it could be the temperature Sensor.
