As long as you have everything taken apart, you should replace both sides.

Along with the head gaskets, the job shouldn't be done without replacing the following:
Exhaust Gaskets
Intake Manifold Gaskets

You should also change the water pump and gasket, thermostat and gasket, and timing belt. This would also be a good time to replace the cam seals and o-rings, along with the front crank seal. The valve cover gasket and valve cover bolt grommets would be easy to do at this time too.

I'm sure I forgot something seeing as its early in the morning, I just got up, and I dont have much time to think of everything.

I also went a bit farther and rebuilt my heads, which may be a good idea for an engine with 185,000 miles on it, but itsn't absolutely necessary.
