SHe runs fine untill she gets to running temp, and then she starts to idle really rough and when I come to a stop..she almost dies..I cant go past 3500Rpms...

Any check engine light? Did you change the timing belt? Maybe you forgot to plug something back in. Check if you plugged in the hose for the IAC valve to. You also say you can't go past 3500 rpm's. Were any of these issues there before the gasket rebuild? Could be a CAT. Could also be a valve.
Get a vacuum gauge hook it up to the brake booster line and see if you get over 20 something forget what they call the rating now? Usually the guage comes with instructions and tells you what level you should see for a normal engine, and says the pressure for troubleshooting. If your in the 20's its definitely a electronic issue.

You sprayed the starting fluid all over? I thought I had done the starting fluid test many times over with negative results before I actually found my leaky intake manifold gasket.
Hmm. Any chance you disassembled and reassembled the IAC valve?
