Narrowest Tire Size that will fit on 7.5 width rims?

Would 215's fitted on a 7.5 in wide rim be wacky? What would that look like?

I've read the fit threads and it seems that 7.5 rim-owners are rare with our cars. Why dat? Just because that is a more rare size?

I think 215's on a 7.5" rim would be fine. I have 235's on a 8" wide rim and it doesn't look bad at all, so you should be fine.

my 15x6 skinnies could fit a 185-195 tire. A 7.5 should be easily able to hanlde a 215.

I've been putting 205's on 7.5" wheels for a long time. On a 205, 7.5" wheel is at the max of the spec, but you should check the tires specs first. I doubt you are running a 35 series tire though.
