I am would generally look for

- body condition
- strut softness
- exhaust condition
- vacuum lines
- coolant lines
- oil color
- coolant cleanliness
- timing belt condition
- shifting feel
- clutch feel
- brake feel & visual
- cv and steering rack boots
- interior condition
- HVAC operation / AC coldness

should I check spark plugs?

anything I am missing that is easy to check?

For $500?? My checklist would be;

Does it move under it's own power?

Does he have a title?

You've got it pretty much covered in your list. You know the usual rust spots, poke around.

May want to find out why the entire front end was replaced. It looks to me like it has post face lift parts, and if it was involved in some horrific accident it may not be structurally sound.

Just drive it and get a feel for it.
