bad temp sensor

could a bad temp sensor make a car bog down when trying to accelerate and make the car die?

It's possible. Does the car start ok? Does the issues it experiences change when the engine is warmed up?

Typically issues with the coolant temp sensor will be different when the engine is cold vs. when it is hot. It may run fine when cold, but crappy when hot....or vice versa.

There's a sensor resistance chart somewhere. It shows two points if I recall correctly.
The temperature information is available through the connector and with Subaru scan tool, you can read it. If it corresponds to coolant temperature as measured using surface contact meter where the sensor is mounted, the sensor is ok.
