Any tips on pulling an engine wiring harness for transplant?

I just bought a 93 Legacy sedan NA for the sake of pulling the engine and harness and putting it in either an XT or a VW bug or Type III. Any tips on removal and eliminating what won't be needed? Access is of course no issue because everything will be out of the way. Any thoughts appreciated.

Well, motor is out, harness is out and 1989 XT is purchased as the recipient.
