What would I need to change out if I were to put outback struts on my 90 sedan?
I plan on doing the rears first and was wondering if I'll have to change more than just the strut itself.

No, and nobody will, they are completely different. You have to use 96-99 Outback struts. All that is needed is the struts, you will use your existing springs and everything. You may have to put a washer between the rear top hats and strut rod to prevent rattle/clunking, can't remember if that applies to 1st gen legacy or just impreza.
